Knitting may be done by hand or by machine. Knitting consists of loops called stitches pulled through each other.
The process of knitting has three basic tasks, the active stitches must be held so they don't drop, these stitches must be released sometime after they are secured and new bights of yarn must be passed through the fabric, usually through active stitches, thus securing them. It is very easy to learn the process of making sock using the sock-knitting machine. Circular needles are great for knitting sweaters or afghans.
I learned a lot from a great book I discovered a while back. Flat knitting, which is done on two straight needles, produces a length of cloth, while circular knitting, which is done on circular or double-pointed needles, produces a seamless tube. However, such circular wales are possible using Swiss darning, a form of embroidery, or by knitting a tube separately and attaching it to the knitted fabric.
Pull the yarn down, and catch it with the right needle. Cable needles are typically very short (a few inches), and are used to hold stitches temporarily while others are being knitted.
You watch it come to life as you go, and little by little, your knitting becomes reality. You also will usually want to stick with chunky yarns (this is a good use for "novelty" yarns, which have lots of texture and are usually thick but also light and fluffy), since they knit up quickly so you can make more presents.
